The Spence will serve classic American dishes as reinterpreted by Blais. Having played an influential role in hospitality for the last 15 years, Blais’ wildly creative approach to cooking and cuisine led to the establishment of TrailBlais, a forward-thinking culinary company that has consulted on, designed, and operated some of Atlanta’s most popular eateries. Utilizing local ingredients on an ever-changing “pantry list” alongside signatures, Blais displays his culinary strengths. The Spence will showcase the best in accessible atmosphere, food and beverage.
